Today I decided to go through some of my recipe books and find some new healthy meals. I have SO many cookbooks and I rarely use them anymore! My mom made me one last year for my birthday that I will treasure forever. It's specifically for a mom to write to her daughter and it holds all of her favorite recipes! I came across the following recipes and am making it tonight for dinner. I haven't tried any of it, but if my parents love it, I'm sure I'll love it too!
Apple Salad (Mom's recipe) - for dessert
3 to 4 delicious apples - chopped w/peel (I bought golden and red)
1 C. celery - chopped
1/2 C. walnuts - chopped but not fine (I bought them already chopped in the baking aisle)
1/2 C. raisins
For dressing:
1/4 C. mayo (I used fat free)
1 t. lemon juice
1 T. sugar
1/2 C. cool whip (also used fat free)
Mix it all together and refrigerate. It's best on the first day as the dressing starts to get runny.
Steak and Rice (Mom's recipe)
1 1/2 lb. boneless round steak, cut in strips
1 1/2 Tbsp. oil (I use cooking spray)
2 onions, sliced and separate rings
1 can sliced mushrooms (I use fresh)
1-2 cans cream of mushroom soup
1/2 - 1 cup water
1 1/2 tsp garlic salt
3 cups hot cooked rice
Cut steak into thin strips. Brown meat in oil. Add onions and saute until tender crisp. Blend soup, water, and garlic salt. Pour over steak. Add mushrooms. Reduce heat, cover and simmer for 1 hour. Serve over rice.
Zesty Roasted Vegetables (from Kraft Food and Family magazine)
1/2lb. whole button or cremini mushrooms
1 1/2 cups baby carrots
1 medium onion, peeled, cut into 1/2-inch thick wedges
1 large yellow, red, or green bell pepper, cut into 8 strips
1/3 C. Kraft Light Zesty Italian Reduced Fat dressing
1/3 C. Kraft grated parmesan cheese
Preheat oven to 450F. Line 15x10x1in. baking pan with foil. Spray with cooking spray, set aside.
Toss vegetables with dressing and 1/4 C. of the cheese; spread into prepared pan.
Bake 28 to 30 mins or until vegetables are tender, stirring after 15 mins. Sprinkle with remaining cheese.
I'm pretty excited about this dinner. I'll have to let ya know how it turns out tomorrow :)
