Garlicky Baked Shrimp

I'm always trying to find ways to dress up shrimp, yet do it without a ton of butter or oil. I came across this recipe and Pat loved it! I messed it up a little and mixed everything together rather than do the crumbs portion separately. So it was a little mushier than it probably would be if I had done it right, but the taste was still good! I made it with corn on the cob for a light meal.

Garlicky Baked Shrimp
  • 1 pound peeled and deveined medium or large shrimp
  • 4 cloves garlic, sliced
  • 2 tablespoons white wine
  • kosher salt and black pepper
  • 1/4 cup softened butter
  • 1/4 cup panko bread crumbs
  • 2 tablespoons chopped parsley

    1. Heat oven to 425ยบ F. In a baking dish, combine the shrimp, garlic, white wine, ½ teaspoon salt, and ¼ teaspoon pepper.
    2. In a small bowl, combine the butter, bread crumbs, and parsley.
    3. Sprinkle over the shrimp and bake until the shrimp are opaque throughout, 15 to 18 minutes.
Another note is that I also bought cooked shrimp and therefore would not bake it this long if I made it again.
