Balsamic Chicken with Mushrooms
2 tsp. vegetable oil
3 T. balsamic vinegar
2 tsp. Dijon mustard
1 clove garlic, crushed
4 - 4oz pieces chicken breast
2 C fresh mushrooms, halved
1/3 C canned chicken broth
1/4 tsp. dried thyme
1. In a nonstick skillet, heat 1 T. of oil
2. In a medium bowl, mix 2 T vinegar, the mustard and garlic. Add chicken and turn to coat.
3. Transfer chicken and marinade to skillet. Saute chicken until cooked through, 3-5 minutes per side. Transfer chicken to a platter and keep warm.
4. Heat remaining T oil in skillet. Saute mushrooms for 1 minute. Add broth, thyme, and remaining T vinegar. Cook, stirring occassionally, until mushrooms are deep brown, about 3-5 minutes longer.
5. Serve chicken topped with mushrooms.
I served this with a simple arugula salad and it was very light and tasty (and really easy!)
WW: 4pts per serving

Sounds good! Is one chicken breast one serving? (for the points)
yes :) I usually buy a package of two chicken breasts (from my favorite store Glaziers) and cut them in half. They end up being about 4oz each.
