Grilled Chicken with Spinach, Mozzarella and Roasted Peppers

Tonight I decided to take it easy and just grill up some chicken. But instead of boring old chicken, I spiced it up a little! Pat told me tonight that I'm an "excellent cook" and the "perfect wife" haha. He seems to be enjoying my new cooking experiments as much as I enjoy blogging about them!

Grilled Chicken with Sauteed Spinach, Mozzarella and Roasted Peppers
4 chicken breast
1 bunch raw spinach
jar of roasted red peppers
1 tablespoon olive oil
1 cup shredded mozzarella cheese
3 cloves garlic, minced
salt and pepper

1. Preheat oven to 400F.
2. Season raw chicken breasts with salt and pepper (or any other spices you like)
3. Grill chicken until no longer pink
4. Meanwhile, heat oil and garlic in a saute pan.
5. Saute spinach in oil and garlic until soft.
6. After chicken is done, top with spinach, mozz cheese and a few red peppers. Heat in oven 5-7 minutes or until cheese is melted.

I served this with a simple side salad and it was very filling :)

HAHA. this actually reminded me of a food Robbie would like!I bet you could cook the chicken in the skillet and it would turn out the same :)
